This is our take on the viral dot cake, made a little more nourishing! We’ve added protein powder and paired it with Greek yoghurt to create a higher-protein version that helps support satiety and more stable energy levels. The yummiest afternoon treat or dessert!

Serves: 1

Time: 40 minutes

Ingredients:

·      1/3 cup plain flour
·      1 scoop vanilla protein powder
·      1 tsp baking powder
·      Pinch of salt
·      1/4 cup milk of choice (I used coconut milk)
·      1/2 tsp vanilla extract
·      1 tbsp honey
·      1 egg
·      100g vanilla yoghurt
·      Hundreds and thousands, to top

Method:

  1. Preheat oven to 180°C (fan forced).
  2. In a mixing bowl, combine all ingredients except the yoghurt and sprinkles. Mix until smooth and well combined.
  3. Lightly oil a ramekin and pour in the batter.
  4. Bake for around 15 minutes, or until cooked through and lightly golden on top. Allow to cool completely
  5. Top with vanilla yoghurt and finish with a generous sprinkle of hundreds and thousands.
