This Greek-inspired nourish bowl recipe is simple, balanced, and makes it so easy to load up on a variety of vegetables without any of the meal-time fuss! Ingredients:
· 2 tbsp hummus
· 1–2 cups mixed leaves
· 6 cherry tomatoes, halved
· ½ cucumber, sliced
· 120g marinated chicken, cooked and sliced
· 2 tbsp pickled onion
· 6 kalamata olives
· 2 tbsp crumbled feta
· 1–2 tbsp tzatziki, to top
Method:
Spread the hummus across the base of your bowl.
Add the mixed leaves on top and add the cherry tomatoes, cucumber, cooked chicken, pickled onion, and olives.
Sprinkle with feta and finish with a dollop of tzatziki on top. Enjoy!
